Vinification : Temperature controlled fermentation in stainless steel at 28ºC for 23 days. Cool initial maceration.

Vine Age : 40 to 60 years old

Tasting Notes : A perfect example of how Spain has changed! This wine is unmistakably Spanish but with modern flavours. On the nose, it is intense and clean with notes of vanilla, toast, mature berry fruits and liquorice. On the palate, well structured & fleshy with notes of fruit and oak and a long, long finish. Big, bold and complex.

Ageing Potential : The perfect blend of fruit and new oak means this wine can be drunk on release or put down for up to 8 years.

Food Pairings: Roasted red meats, (especially lamb with a touch of garlic), cheeses, intensely flavoured pasta dishes & bitter chocolate desserts.



Bajoz Caño


Current Vintage: 2004
Region : Toro
Grape : 25% GARNACHA TINTA, 75% TINTA DE TORO
Oak : None
Harvest : Beginning of October
Colour : Red

Vinification : Temperature controlled fermentation in stainless steel at 28ºC for 22 days. Cool initial maceration.

Vine Age : 30 to 80 years old

Tasting Notes : Deep, intense cherry red in colour. On the nose, intense and concentrated black and red berry fruits (cherry, raspberry etc.), whilst on the palate it is full-bodied yet easy-drinking and very juicy. Bursting with personality and fresh, concentrated mature berry fruit. Nice structure and soft tannins. The Garnacha adds suppleness. Pleasant & juicy with a long finish.

Ageing Potential : Caño should be drunk within three years of vintage.

Food Pairings : Great served slightly chilled on its own. As a juicy, young wine, it can accompany almost anything, from roasted meats to light salads. Experimentation is often rewarded!


Bajoz Joven

Oak : 5% in new American oak

Vinification : Temperature controlled fermentation in stainless steel at 28ºC for 20 days. Cool initial maceration.

Vine Age : 20 - 40 years old

Tasting Notes : Attractive and intense cherry colour with violet rim and almost blue tones. Clear and intense fruity bouquet with delicate notes of liquorice. Well balanced and structured, full of fruity sensations, elegant, expressive and bursting with personality. Long finish with a bitter note that adds interest to the finish.

Ageing Potential : Bajoz Joven should be drunk within three years of the harvest.

Food Pairings : Almost anything - red & white meats, pasta dishes, including creamy sauces, great with Pizza, and a perfect match for serrano ham - also great on its own! This wine is great served very slightly chilled.

Oak : 12 months in new American oak
Harvest : End of September

Vinification : Temperature controlled fermentation in stainless steel at 28ºC for 20 days. Cool initial maceration. Total maceration time of 20 days.

Vine Age: 70 to 102 years old

Tasting Notes : An expressive and elegant nose with extremely complex aromas and never-ending hidden layers which can be more fully appreciated after time in the glass. Elegant integrated oak (which will further integrate with ageing) with hints of mature fruit ie: currants, raisins and blackberries (Christmas cake flavours) and dark chocolate. On the palate, a perfect blend of unfolding soft rounded, mouth filling flavours and delightful dried and mature fruit (raisins etc) with soft sweet oak tones and a long, long finish.

Ageing Potential : Within 10 years of vintage

Food Pairings: Wines made from Tinta de Toro make a perfect match with red meats slow roasted in garlic. A local speciality is milk-fed lamb roasted in a wood-fired. Roasted vegetables with a tomato based sauce also work well.
